Cornell University
Between the Va-Va Vegan Bar, located in Keeton House; One World Café, an all-vegetarian café on campus offering popular dishes such as African peanut stew and a vegan Reuben; and the barbecued tofu with smoked tomatoes and watermelon at the Trillium Café, students at Cornell have good reason to want to re-enroll for as many years as possible. Other must-try dishes include the Tofu Kan delight, orange tamari grilled tofu steaks, dairy-free blueberry smoothies, and vegan black-cocoa cake with vegan ganache.
University of North Texas
Shaking the university dining scene to its very core, the University of North Texas opened the nation's first all-vegan dining hall at a major school last fall—called Mean Greens—in response to student demand and thus kick-started a burgeoning nationwide trend. Continuing to raise its profile among the nation's most vegan-friendly schools, Towson has really stepped it up this year. Its T-Veggie program, started in 2009, now covers the whole campus and offers delicious cruelty-free options, including coconut-curry tofu and lentil sloppy Joes. Vegan chicken cheese steaks and Tex-Mex tater tot casseroles are just a small sampling of the meat-free meals that appeal to all students. Don't miss the Silk soy milk dispensers, now offered in all dining halls on campus.

University of Illinois
With vegan options at every meal and in every dining location, the biggest challenge that students at the University of Illinois face is deciding what and where to eat. Vegan pumpkin lasagna, chana masala, and vegan ramen are some of the more popular offerings. Soy-Tainly, an all-vegan venue at Ikenberry Commons, is a must-visit, but also be sure to check out Pennsylvania Avenue Residence Hall's Mongolian wok station (complete with tofu, tempeh, and edamame) and Leafy!—a new vegetarian/vegan specialty restaurant at the Lincoln Avenue Residence Hall.
